Bakery equipment for breadmaking — the heart of the bakery
Breadmaking is a craft built on a controlled, repeatable process. Equipment supports each stage; it does not replace a sound recipe or the baker's skill.
Preparing ingredients — the foundation
Flour is stored in bins or silos sized to the production volume. A silo is a storage and conveying unit, not a dough dispenser. Fluidization at the silo base introduces conditioned air to aerate and loosen the flour so it can flow to the next process step. It does not mix finished dough or remove lumps from dough.
Dough mixing and processing
A dough mixer combines ingredients and develops dough structure. Higher-spec professional mixers can program each mixing phase, including the intended pressure or working force on the dough, speed and duration. Select the recipe for the dough type, batch size and machine capabilities.
Proofing baskets and pans support the dough's shape during final proofing. Trolleys help move baskets, dough bowls and trays safely and in an orderly way between work areas.
Proofing and final handling
A proofing chamber provides set temperature and humidity conditions. Setpoints depend on the product and proofing stage.
A loading aid helps transfer and position proofed loaves as they are loaded into the oven. Wetting is a separate step: depending on the process, dechlorinated water is applied when loading the bread into the oven and again when unloading it. The method depends on the product and equipment; this is not a warm-water spray.
A baker's wetting brush is not a marking tool. It is a hand brush for applying water or another suitable liquid to baked goods. Larger operations may use automatic wetting equipment.
Transport and storage
After baking, bread needs space for controlled cooling. Crates support hygienic, gentle and organized handling during cooling, dispatch and transport.
Equipment must fit the product range, production volume, available space and actual workflow. For more information and contact with experienced bakery technologists who can advise on suitable equipment and guide the process for this bread, visit vyrobak.cz.
